Vegetable casserole with mashed spud

Sorry I haven't posted in a while.  I've been busy.

This recipe serves 2.

Vegetable Casserole
frozen mixed vegetables
1 small can corn
1 small can bean mix
1 vegetable stock cube
1 cup water
1 serve microwaveable minestrone soup

Boil frozen vegetables for 10-15 minutes.  Then drain them.  Add cooked vegetables as well as all other ingredients to a saucepan and boil for 15 minutes.  Serve over mashed spud.


Mashed Spud
5  potatoes

margarine
milk

Cut potatoes into cubes.  Add cubed potatoes to a saucepan and fill with water.  Boil cubed potatoes for 15-20 minutes.  Then drain.  Mash potatoes with a potato masher and add margarine and milk to taste.

New baking dish

Got a new ceramic baking dish from Kmart.  I used to have one but I broke it.  I decided to get one again.  This one was cheap and only $9.

Introduction and a recipe

I've started this blog for my cooking experiments in the kitchen.  I love cooking, in particular vegetarian food.  I've been experimenting in the kitchen for years, pretty much since a year after leaving home.  I also like looking up recipes on the internet as well as reading cook books and food magazines.  Generally I like recipes that are easy to cook and taste great!

A few things about me:
I'm in my late 20s
I've been married for 8 years.
My favourite cook books are the '4 Ingredients' series.
My favourite foods are- potato, corn, cheese, wholemeal toast, salad sandwiches, canned spaghetti, curried egg sandwiches, soy chocolate, raspberry muffins, cheesecake and pavlova.
My favourite things to drink are- fanta, vanilla coca cola, fanta spider, banana smoothie, chocolate milkshake.
My favourite alcoholic drink is melon midori.
My hobbies are: playing piano, writing novels, drawing, looking at art, reading, watching movies and playing games.

A simple recipe to start with:

Cheesy baked beans on toast
serves 2- 4 , vegetarian friendly

1 can baked beans
4 slices of cheese
4 slices of bread
margarine
canola oil spray

Preheat oven to 200 degrees celcius.  Spray canola oil on a flat baking tray.  Spread margarine on bread and then place bread on the tray.  Spread baked beans over all the bread.  Place cheese on top of the baked beans.  Place tray in the oven and cook for 20-25 minutes.
